Pickled cucumber

Ideal in sandwiches or next to a plate of cured meats, pickled cucumber are easy to do and can be used in almost any recipe.

For one pickled cucumber:

In a jar, put together:

Close and shake the jar to mix all the ingredients, until the salt and sugar are completely dissolved in the vinegar.


Cut the whole cucumber in thin slices, around 1 millimetre thick.

Place the cucumber slices in the jar with the pickling vinegar. Make sure all the slices are covered, otherwise some slices above the vinegar will not pickle and might go bad.

Leave the cucumber to rest for at least an hour before eating. Pickled cucumber can be kept in the fridge.
